In this case, we spend as much flour as the dough takes, we couldn’t measure it exactly, but we’ll describe it in more detail in the recipe.

First, beat the eggs into a deep bowl, add salt, about 1/2 teaspoon. Or add according to your taste.

We always add salt to enhance the flavor of the other ingredients. Therefore, if you want to get a fresh taste, you don’t need to add salt.

Now beat the eggs with a whisk or mixer, but not for long, the main thing is that the salt dissolves and the white and yolk are mixed.

Now add flour and start kneading the dough with a spoon. We first added about 3-4 tablespoons and stirred, then gradually added more flour.

When it begins to knead too hard in the bowl, put the dough on a table sprinkled with flour and continue kneading the stiff dough with your hands.

We make the dough exactly tight in order to roll it out into a thin layer. You can check readiness like this: When the dough stops sticking to your hands, then press it down from the edge of the dough with your fingers and look, if it seems watery, sprinkle the dough a little more with flour and knead.

When the dough is ready, you can immediately roll it out; for convenience, we divide the dough into parts, for example into 3, put one part on the table, and put the rest aside.

To prevent the dough from winding, it must be placed in a plastic bag or wrapped in cling film.

Roll out one part of the dough into a thin layer; the thinner it is, the tastier the brushwood turns out. Therefore, we make the thickness approximately 1-2 mm; by the way, you can make any shape you like, even roll it out into a square.

Now we cut the dough into arbitrary shapes: strips, rectangles, oblique strips... Anyway, you can give it different shapes, for example, make curls. We will show them in the recipes below.

While we are rolling the dough and cutting into strips, let the oil heat up; you need to pour in enough of it so that the brushwood floats in it. It is better to use a small cauldron or saucepan.

When the oil is hot, you can lower our strips into the oil, giving shape at the same time if the strips are long. Fry until golden brown. The process is constantly monitored. Also, this is called frying, only at home.

In order to find out whether the oil is hot or not, you need to dip a wooden stick or spoon into it. If the oil around you begins to boil, you can start frying.

Once we like the color, we take out the brushwood and place it on a paper towel so that excess oil is not absorbed into the baked goods. When we load a new batch for frying, sprinkle the finished brushwood with powdered sugar, generously, to make it sweet.

We repeat this with the rest of the dough. By the way, it is better to change the oil more often so that the baked goods do not become too harmful.

  • Milk - 50 ml (1/4 cup);
  • Sugar - 2 tablespoons;
  • Salt - 0.5-1 teaspoon;
  • Flour - 2-2.5 cups.

Beat the eggs into a deep bowl, immediately add sugar, salt and pour milk. Beat with a mixer at medium speed. You just need to dissolve the sugar and salt.

You can use a whisk, but a mixer is faster.

Well, it’s still very simple to prepare, you just need to get used to it during frying to form a rose. To be honest, we didn’t do it so beautifully the first time. But with just a few pieces it turned out beautifully, and most importantly, uniquely tasty.

When the oil is hot, take two sticks (we used for sushi) or something similar, thread one stick into the center, hold the second one on top and put the dough into the oil.

While frying, hold the dough with chopsticks, giving it a rosette shape. Usually the dough tends to straighten out, but needs to be held.

When the brushwood has a nice golden color, remove it to a paper towel. We repeat this with all the roses.

Afterwards you can prepare honey syrup. To do this, mix a spoonful of honey with two tablespoons of water and heat it in the microwave until the honey becomes liquid. Mix until smooth and pour it over our roses.

If you need more syrup, then increase the amount of ingredients proportionally.

    Gradually we begin to add sugar (from 10 grams to 100 grams - the sweeter you want the brushwood, the more sugar you add), a pinch of salt and flour. We do this in portions so that the yolks are evenly distributed throughout the dough.

    The finished dough will have a stiff consistency. Cover it with a bowl and let it rest. This will take about five minutes.

    Separate the lump (a little more chicken egg). Roll out to a thickness of two millimeters.

    Cut into strips two centimeters wide. You can use a sharp knife, or you can take a special wheel with wavy edges.

    Now cut the strips diagonally. We make cuts every seven centimeters. We cut a hole in the center of the resulting figured diamond.

  5. We cut the layer into strips, in the center of which we make a cut, and through it we turn out one of the edges of the workpiece. If you don’t want to mess around, then you can leave everything as is, the taste of the cookies will not change.
  6. After the pieces are cut, put the frying pan with oil on the fire. The twigs fry very quickly, so there is a risk that you simply won’t have time to put in and take out ready-made ones. We pour in such an amount of oil that our products drown in it. When the pieces fall into the boiling oil, they will begin to swell right before your eyes and take on all sorts of bizarre shapes.
  7. The finished brushwood should be placed on a paper napkin, towel or baking parchment, which will absorb excess fat.
  8. The dish is served generously sprinkled with powdered sugar.

Fluffy and soft on kefir - an ideal treat

The favorite cookie of Soviet children does not have to be exactly crispy; if you knead its dough with 300 ml of kefir and 3 cups of flour, we will get a whole mountain of fluffy and magically tasty pastries. You will also need:
