Borscht can be cooked with boiled or raw beets. It is chopped into straws, sprinkled with vinegar and sautéed in fat. The vegetable is processed so that it does not lose its beautiful burgundy color during stewing. Then broth, sugar, tomato puree are added to the beets and, having closed the lid, stew over low heat. The young root crop is stewed for 30 minutes, and the old one - from one to one and a half hours. Some time before the end of the stew, add browned roots and onions.

Meat broth is cooked separately, which consists of pulp and bones. It is salted only after it boils, as this improves the taste of the borscht base. It is important to remove the foam and fat from the broth several times, only then it will be transparent. It is cooked over low heat, otherwise it will have an unattractive appearance, and the taste will noticeably suffer.

In boiling meat broth put fresh raw cabbage, and after boiling again, add stewed beets with roots and cook for about 30 minutes. At the end of cooking, browned flour diluted with broth, spices, salt, sugar are added to the borscht and boiled for ten minutes.

If not fresh cabbage is added to the dish, but sauerkraut, then it is first stewed. You can cook borsch with boiled beets, then it is added in the same way as other vegetables. It is good to serve cheesecakes, krupenik or other stuffed dough products with the dish. True, this will increase its nutritional value.

According to this recipe, a classic borscht is prepared. Its calorie content depends on the ingredients that make up the composition. Therefore, if you adhere to a strict diet - due to illness or for weight loss - it is better to refuse borscht with pork. A dish with pork will successfully replace its counterpart with beef or chicken.
