Table wine makes up the lion's share of wine production in countries with developed industrial viticulture. The reason for this is the beneficial properties of this drink. Knowing a simple classification, you can easily choose a good wine with excellent taste and health benefits.

A drink of this nature has some manufacturing features that make it different from other wines. This wine can be divided into several types. The criterion is the amount of sugar in the drink, while the amount of alcohol ranges from 8 to 15% of turnover. Varieties of wine:

  • dry (sugar content - 3 g/l);
  • semi-dry (sugar - from 4 to 18 g / l);
  • semi-sweet (sugar - from 18 to 45 g / l);
  • sweet (sugar content from 45 g/l).

Dry table differs from others in relatively low alcohol content and the presence of freshness in taste. Semi-dry and semi-sweet wine has an unobtrusive sweetness on the palate. The quality of the drink directly depends on the production technology. There are such varieties:

  • ordinary - wine without aging, which is released within 3 months after production;
  • vintage - aged wine good quality from various grape varieties with the presence of production features that distinguish the manufacturing country;
  • collection - an alcoholic drink of excellent quality with an exposure of at least 6 years.

The production of this type of alcoholic beverage is the most difficult. The wine requires good care and a low temperature in the room during production. A characteristic feature is the absence of intoxication after consumption.

Wine products stimulate the secretion of the salivary glands and help the production of gastric juice, increasing appetite. For this reason, excess body weight and increased acidity of the stomach are contraindications to the use of wine. It is not advisable to drink an alcoholic beverage in diseases of the kidneys and liver, stomach ulcers, pancreatitis, gastritis and other chronic diseases.

Traditionally, wine is drunk from glasses. It is best to choose a glass of thin glass with a high leg. Dry and red wine products are recommended to be drunk from tall wine glasses made of colorless glass. It is customary to drink semi-sweet products of winemaking from wide and open glasses.

Champagne should be drunk from tall glasses, as it is this shape of the glass that slows down the release of carbon dioxide. According to etiquette, it is customary to fill a glass no more than 2/3 of the capacity in order to be able to evaluate the taste and color of the drink. It is not necessary to consume the product of winemaking immediately, it is necessary to wait a little for it to be saturated with oxygen.

White table dry wines are characterized by a very wide variety of organoleptic qualities: from fresh with a hint of grapes and young with carbon dioxide residues to mature aged and sometimes thin old bottled wines; from light - from the northern regions of viticulture to more complete - from the south; from simple in aroma to elegant, complex in bouquet.

This is due not only to the difference in technologies for their production. Here, the influence of the raw materials, the extraordinary variety of grape varieties used, including Muscat and other aromatic varieties, as well as red varieties, largely affects.

The very state of white grape varieties is also varied: their degree of maturity and quality depending on the region, microzone, illumination of the site, and conditions of the year.

At the same time, in all white wines, the slightest flaws are easily detected, hidden in other wines by a high concentration of alcohol, a strong aroma, and phenolic substances. Tsinandali is one of the best wines. Created in 1926 by A. A. Egorov in the ancient center of Georgian winemaking Tsinandali from Rkatsiteli and Mtsvane varieties. Wine of light straw color with a delicate floral-ethereal bouquet and a full harmonious taste, quite fresh, with a pleasant aftertaste of barrel aging. Tsinandali was awarded 10 gold and 9 silver medals.

Criminal liability and fines were abolished, and an article prohibiting the production of alcohol-containing products at home was removed from the Criminal Code of the Russian Federation. Moonshine in other countries:

In Kazakhstan in accordance with the Code of the Republic of Kazakhstan On Administrative Offenses dated January 30, 2001 N 155, the following liability is provided. In Ukraine and Belarus things are different. Articles No. 176 and No. 177 of the Code of Administrative Offenses of Ukraine provide for the imposition of fines in the amount of three to ten tax-free minimum wages for the manufacture and storage of moonshine without the purpose of sale, for the storage without the purpose of sale of apparatus * for its production.

Article 12.43 repeats this information practically word for word. “Production or purchase of strong alcoholic beverages (moonshine), semi-finished products for their production (mash), storage of devices for their production” in the Code of the Republic of Belarus on Administrative Offenses. Item number 1 says: "Manufacturing individuals strong alcoholic beverages (moonshine), semi-finished products for their manufacture (mash), as well as storage of devices * used for their manufacture - entails a warning or a fine in the amount of up to five basic units with confiscation of these drinks, semi-finished products and devices.

*Purchase moonshine stills for home use, it is still possible, since their second purpose is the distillation of water and the production of components for natural cosmetics and perfumes.

An ordinary buyer cannot always understand what is the fundamental difference between them. And if everything is even more or less clear with the color and the country of the manufacturer, then how to determine the degree of strength, sugar content and aging?

Wine classification

All grape wines are divided into two main types - sparkling (effervescent and champagne) and still wines. If we talk about quiet (not containing carbonic acid), then all of them, in turn, are divided into three categories - table, fortified and dessert. Table wines have the lowest strength (no more than 14% vol.) and are produced using natural fermentation technology. Depending on the sugar content, table wines are divided into dry, semi-dry and semi-sweet. They can be white, red and pink in color.

The next two categories of wines are fortified (aged), which allow the addition of rectified alcohol in the production technology, and dessert wines, which are flavored with various additives and have a high sugar content.

How and with what to use table wines

Having dealt with the main classification of wines, you also need to know that the definition of "table" is not always indicated on the label. The correct table wine is "ordinary" wine, as labels are usually labeled. Ordinary wine began to be called table wine due to the fact that these wines, in terms of their taste, are most optimally suited for consumption during meals. And if we talk specifically about the use of ordinary wines, then, depending on their classification, to different types certain wines are served.

For example, dry white wine is served with fish and poultry dishes. A heavier meat meal involves the use of rich red wines, and depending on the type of meat served, the appropriate wine is selected. For example, beef goes well with any degree of sweetness, but dry red wine is most suitable for fatty pork.

Rosé table wines are served with light salad appetizers and as an aperitif before dinner. It is allowed to serve rose wines with some desserts and fruits. Rosé and white wines can be consumed throughout the meal, while red wines are usually only served with the main course.
