Dear friends, today we will prepare a delicious, tender, sunny aspic pie with apricots. We decided to try this recipe in a new silicone baking dish.

The recipe for jellied pie is very simple, and the look and taste is surprisingly tender and festive. It is advisable to eat it only after it has completely cooled, so get ready - you will have to stand guard over the pie, driving away those who want to steal a piece, because not everyone can resist the amazing aroma from it.

We really enjoyed this jellied pie. I share the recipe:

  • 250-300 g flour
  • 3 yolks
  • 100 g sugar
  • 3 table. spoons of sour cream
  • 2 tsp baking powder
  • 120 g margarine
  • 500-600 g canned apricots (or peaches)
  • 3 eggs
  • 200 ml sour cream
  • 30-50 g sugar

In a bowl, grind soft margarine with sugar and egg yolks.

Then add sour cream and mix thoroughly.

Gradually add flour, stirring all the time.


But it turned out that everything that was being done was for the better. The dough turned out to be soft and not tough, it was impossible to knead it even with your hands, I stirred with a spoon, and put it in the mold with a spoon and simply spread it over the entire baking dish, including the sides.

In its finished form, the jellied pie only benefited from this; the dough turned out to be tender and airy. And if you knead a stiffer dough, it will turn out tougher, but darker, but still tasty. So it's up to you to decide.

Place the dough in the pan and pierce the entire surface with a fork, including the sides.

I had this jar of apricots in syrup (820 g), not all of them were gone, there was a little left:

Place the apricot halves.

Prepare the filling: beat everything for the filling in a blender: eggs, sugar, sour cream.

Pour the filling into the pie.

Place the pan with the jellied pie in a baking tray (so as not to burn the bottom) and put it in the oven to bake at a temperature of 180-200 degrees for about 35-40 minutes. As soon as the filling is slightly browned, remove it. The filling will jiggle like a cheesecake - that's how it should be.

Now you will have to inform everyone at home that the apricot jellied pie is ready, but you can’t eat it yet! That's all, because the filling must harden. So, stand firm against the onslaught of your household members - they will understand your actions later.

When the pie has completely cooled down and the filling has hardened, cut it into pieces and serve.

Instead of apricots for the jellied pie, you can use medium-sized peaches in syrup. If you made peach jam for the winter. Like me, feel free to open the jar, the pie with them will also be very tasty!

How to cook a pie with apricots and kefir in the oven

1. To prepare the bulk dough, use a large capacity container. Beat the eggs into the container. Then add sugar.

2. Beat the ingredients using a mixer.

3. Then pour kefir into the container and add soda. There is no need to extinguish the soda in advance. Soda will react with kefir.

4. Finally, add flour to the products. It should be sifted and free of lumps.

5. Beat the mixture with a mixer. As a result, we get a dough that can be poured into a mold without using any auxiliary equipment.

6. The filling dough is ready and you can start preparing the filling. To do this, wash the apricots. Then you should remove the pits from the apricots. We divide the apricots into halves.

7. The dough and apricots are prepared, you can do the work of shaping the pie. We will need a large diameter mold (approximately 26 cm). The bottom of the pan should be covered with paper, as the dough may burn during baking. Then you need to pour some of the dough into the mold and distribute it so that it covers the bottom.

8. Place the filling on the dough. At the same time, we lay out the apricot slices with the open parts facing up.

9. Cover the apricots with the second half of the dough. We send the form to the oven. Bake the apricot pie for about 40 minutes at medium temperature.

10. After the time has passed, remove the pie from the oven. A pie with apricots made with kefir will have a beautiful brown crust and a pleasant aroma.

11. Remove the still warm pie from the pan.

The apricot pie is ready to eat.

To prepare apricot jellied pie you will need:

  • Flour - 220-250 g;
  • Sugar - 130-150 g;
  • Canned apricots - 0.5 kg;
  • Chicken eggs - 3 pcs.;
  • Sour cream - 250 g;
  • Baking powder - 1.5 tsp;
  • Yolks - 3 pcs.;
  • Butter or margarine - 120 g.

COOKING

  • Prepare the dough. In a bowl, grate margarine with 100 g of sugar and three yolks onto a coarse grater.
  • Add 3 tbsp. spoons of sour cream and stir everything again.
  • Gradually add flour into the dough (in portions), then baking powder. At this stage, stir the dough constantly.
  • Take a baking dish (with high sides) and grease it with butter or margarine. We distribute the dough over the bottom and sides to form a “plate” for our filling.
  • Then pierce the entire surface with a fork.
  • Take canned apricot halves (you can chop them if you wish) and spread them over the entire surface of the dough bottom in the mold.
  • For the filling we take 300 g of sour cream, 3 eggs and 30-50 g of sugar. Place all this in a blender or mixer and beat.
  • Pour the filling into the baking pan directly into our “dish” of dough and place the pan in the oven.
  • Bake the jellied pie at 180*C for 35-40 minutes. We judge the readiness of the pie by the golden brown filling.

PS. It is important! A baked jellied pie is not ready yet when taken out of the oven! The filling will jiggle and ripple as it will only set once the pie has cooled! Until this moment, do not cut the pie under any circumstances!

    • vanilla essence – 1 teaspoon;
    • salt – 1/8 teaspoon;
    • powdered sugar - for sprinkling.

    For filling:

    • medium apricots - 12-13 pieces.

    How to make apricot pie



    Beat sugar and butter until smooth and creamy.

    Add eggs to the resulting mixture one at a time, beating thoroughly each time.

    Add vanilla essence and stir.


    Carefully sift the flour to saturate it with oxygen, in which case the baked goods will be of the highest quality.


    Add flour along with salt and baking powder, knead into a thick, but not stiff, dough.


    Pour the dough into the mold and level it with a spatula or a regular spoon.

    Cut the washed apricots in half and remove the pits.


    Place the fruit halves in an even layer on the dough, skin side down. Apricots should not sink, but simply lie near the surface.

    Bake in an oven preheated to 180°C for about 40 minutes, this time is approximate, be guided by the features of your oven. Check readiness with a wooden stick, such as a match.


    Remove the finished pie from the mold and sprinkle with powdered sugar to form an even layer through a strainer while it is still warm. This is necessary so that the powder “sticks” well.

    I will share with you some cooking tips:

    1. Butter should be used softened to room temperature.
    2. In this recipe, without compromising the taste, you can replace vanilla essence with 1 tablespoon of vanilla sugar;
    3. Instead of apricots, plums, peaches or nectarines are perfect here; in winter you can use canned ones.
    4. Instead of baking powder, I often use homemade baking powder made from baking soda and citric acid, and I never use soda slaked with vinegar anymore.
    5. The dough volume is designed for a round mold with a diameter of 21-24 cm or a square one with a side of 20 cm.
    6. Before pouring the dough into the mold, it is better to grease it with butter or cover it with parchment paper, so that later it will be more convenient to remove the finished pie.
    7. If the apricots are not ripe enough, you can sprinkle a little sugar on top of the baked goods before putting them in the oven.
