Pour in baking soda - the mass will turn white, hiss a little, and perhaps increase in volume. Now we remove our structure from the water bath.

Pour cocoa powder, be sure to use a strainer, and add baking powder to it.

Sift most of the flour, add the rest as needed, since the quality of wheat flour, its density and softness may vary.

Knead the chocolate dough, crush it with flour, wrap it in film one turn and refrigerate for 30 minutes.

Beat at high speed with a mixer or blender whisk into a creamy mixture. You can traditionally not add sugar or powder if you don’t really like sugary-sweet creams, but the sweetness of boiled condensed milk is completely enough for the cream, it turns out just perfect and moderately sweet!
