The recipe includes the following ingredients: 300 grams of fish fillet, preferably with skin, several cloves of garlic, two tomatoes, a medium-sized onion, lemon juice and olive oil. The bottom of the pot (or ceramic mold, but always with a lid) is greased with olive oil. The fish is cut into small pieces, which are laid out in a bowl, skin side down. If you are using frozen vegetables or fish, you need to defrost them first. Just take the food out of the refrigerator in advance.

Preparing the fish

Always use a separate cutting board for cutting fish! This is important, since neglecting such hygiene measures can lead to serious health risks. Pour boiling water over the knife and scissors you use in the process or wash in the dishwasher. We need one medium sized fish. If you used uncut haddock for the dish, you need to prepare it before you begin the step-by-step cooking process.


Algorithm of actions

  1. Cut 2 rectangles of foil so that each is 8-10 cm longer than the fish itself. Put one aside for now, and place the other on a baking sheet and grease with 1 tsp. olive oil using a silicone brush. Salt, pepper and season each haddock steak to taste, then place it in the middle of the foil in the order in which they were originally, that is, so that it looks like a whole fish.
  2. Wash 200-300 g of broccoli, divide it into florets and place in a bowl. Add 1 tsp. olive oil, salt and pepper to taste and mix well with your hands. You can use gloves at this stage, or you can simply wash your hands with soap later. Place the broccoli on both sides of the fish. Pour the remaining juice over the fish itself.
  3. Pour 100-150 g of beans with less than half a teaspoon, add salt, pepper, mix and place in the same way as broccoli.
  4. Take one medium onion, remove the husks, wash and cut into large half rings. We separate the half rings from each other and arrange them among the already prepared vegetables and fish.
  5. Now we need 3-5 medium potatoes. We clean them, wash them and cut them into slices, as shown in the photo. It is this kind of cutting that is relevant for our recipe, because the fish cooks quickly, and in this case it is unlikely that the potatoes will remain raw inside. Place the chopped root vegetable in a bowl, season to taste with salt and pepper, then add 1/2 tsp. dry garlic and 1 tbsp. l. mayonnaise without top, mix the contents and add to other vegetables. Spread the remaining mayonnaise in a bowl over the surface of the fish.
  6. Water the haddock and assorted vegetables with 2-3 tsp. olive oil. We take a previously prepared piece of foil, cover our workpiece with it, and carefully seal all the edges. Using a toothpick, make 5-6 punctures on the surface of the foil. Preheat the oven to 200°, place a baking sheet with our future dish in it. Bake for 30-40 minutes. When taking out the finished dish, do not forget to take an oven mitt. Also, be careful when opening the foil to avoid getting burned by the hot steam.

The total amount of potatoes should be divided into two parts. Cut one for filling into small cubes - into a plate.


Peel the carrots and garlic cloves with a knife. Grate the first one on a coarse grater, and cut the second ingredient into circles. Add to bowl - stir.


Let the frozen zucchini thaw in cold water. Be sure to squeeze the moisture out of it. Pour into a plate along with the oregano, ground nutmeg and black pepper. Salt foods to taste.


Finely chop the prepared dill. Add to the main mass and stir. If you wish, you can add dried herbs, for example, herbes de Provence. They are very fragrant, they contain thyme or otherwise called thyme.


Place a spoonful of natural sour cream into the general mixture. Mix well until smooth. Low-fat cream is also suitable.


The rest of the potatoes should be cut into slices 2-3 mm thick. Pour into a common plate.


Peel the onions. Then cut it into half rings - finer if possible. Mix with potatoes.


Now prepare the haddock. Cut off all fins. A special feature in cleaning sea fish is the black film inside the belly, which must be completely removed so that there is no bitter taste. Then use a small knife to remove the small scales. Rinse thoroughly under water.


Place on a cutting board and press down on the fish to release excess liquid. Then sprinkle with lemon juice. Rub with table salt and spices.


Now you can stuff the fish with the prepared vegetable filling. If necessary, secure with toothpicks.

  • Parmesan (cheese) – 50 g;
  • Lemon – 0.5 pcs.;
  • Olive oil – 3 tbsp. l.;
  • Pepper, salt and rosemary - to taste.

Cooking method:

Take the whole haddock and first clean it of scales and entrails, then wash it and cut off the fins. Rub it with rosemary, black pepper, salt and sprinkle with lemon juice. Place cilantro and dill inside the haddock so that the fish is saturated with the aroma of these herbs. At this time, it is necessary to deal with the vegetables, we wash them, and then cut the tomatoes into slices, onions into thick rings, and eggplant into large pieces. Heat a frying pan and pour a couple of tablespoons of olive oil into it. Make the fire medium and lay out the already chopped onion, which we fry for 5 minutes. Then add eggplant and tomatoes to it, and stirring constantly, fry the vegetables for another 10 minutes.

Preheat the oven to 200 degrees, grease the foil with olive oil, place fish and vegetables on it, which we bake in the oven for no more than 40 minutes. Haddock with soy sauce

Ingredients:

  • Haddock – large;
  • Ketch;
  • Soy sauce;
  • Mayonnaise;
  • Sour cream;
  • Bay leaf;
  • Pepper – peas and ground white;
  • Garlic.

Recipe:

Before baking fish in the oven, as always, it is necessary to clean it, gut it and wash it thoroughly so that nothing unnecessary remains. Then You can leave it whole or cut it into fillets, but in any case, the haddock should be allowed to dry. After this, mix the garlic with soy sauce, pour this marinade over the haddock and let it brew for 20 minutes.

Now grease a baking tray with oil and place the fish steaks on it, also add a little water so that the haddock releases its juice. Now pepper, but do not add salt, since soy sauce is already salty, add a bay leaf and peppercorns - place the haddock in a preheated oven at 200 degrees for half an hour.

A while the haddock is cooking, there is time to prepare the sauce for pouring: whisk ketchup with mayonnaise and sour cream. Pour the prepared mixture over the haddock and bake until done. However, you shouldn’t serve it right away; let it brew thoroughly so that the fish is piquant and tastier. Haddock with mushrooms

Ingredients:

  • Haddock fish – 4 pcs.;
  • Sour cream – 250 ml;
  • Onions – 3 pcs.;
  • Fresh mushrooms – 400 g (do not use dried ones);
  • Cream – 250 ml;
  • Cheese – 200 g;
  • Salt - to taste.

Cooking method:

Peel the onion, wash it and cut it into medium-sized cubes. Heat a frying pan and fry the onion in vegetable oil until golden brown, this will take about 5 minutes, do not forget to stir it constantly. We do the same with mushrooms as with onions, only we do not cut them very finely. Simmer everything together, covering with a lid for another 7 minutes, then stir, add salt and place on a plate.

As you can see, in the process of preparing fish, everything is simple and clear so far, but we continue and begin preparing it. It is in this recipe that you can use haddock fillet or its whole carcass. Rinse the fish well and then remove all the insides. Let it dry, and if there is very little time, then dry the haddock with a clean paper towel. Next we salt the fish, using edible sea salt, which has a significant amount of useful substances.

Filling is only needed to make the haddock aromatic and juicy. If desired, you can also add a little chopped dill.

Grate the cheese on a coarse grater, then grease a baking sheet with oil and place the fish on it, which we cover with mushrooms and onions on top. Pour over the filling and sprinkle with cheese.
