To prepare pike perch baked in the oven we will need:

  • Several carcasses of sea pike perch (medium size)
  • Onions and sour cream
  • Mushrooms
  • Cream and salt

Cooking process:
First, cut the onion into cubes and fry until golden brown in vegetable oil.
Mushrooms must be washed and peeled (it is better not to use them). Do not cut the mushrooms too finely. Mix mushrooms and onions and simmer for five minutes. After adding salt to taste, place the mushrooms and onions on a plate.

Required ingredients:

  • champignons – 8 pcs.;
  • Wheat flour;
  • eggs – 4 pcs.;
  • vegetable oil;
  • cheese – 120 gr.;
  • river pike perch – 1 piece;
  • mayonnaise – 200 gr.;
  • greenery.

Cooking process:

Fresh pike perch must be cleaned of scales and entrails. The head and fins must be cut off. Wash the fish well, then let it dry or pat dry with a paper towel.

Cut the pike perch into portions, then add a little salt and pepper. Pour some vegetable oil into the frying pan.

Well, yes, today we will prepare an awesome fish dish (there will be waste left, add a little pulp, trimmings, it will be for you). The estimated time we will spend on this whole thing is forty minutes. In the end, we’ll get enough food for four, or three if you’re really hungry. As is obvious from the name, there will be not just any fish, but a very specific one. Actually, we will start with such an important part as the list of ingredients.

Here he is:
- Eight hundred grams of pike perch (huge!!!).
- Two hundred and fifty grams of mushrooms (Forest mushrooms, such as boletus or chanterelles, although champignons will also do).
- Two hundred and fifty milliliters of cream (at least thirty percent fat content!).
- One medium onion.
- A small bunch of parsley.
- Fifty grams of Parmesan cheese.
- Salt and ground white pepper to taste.
- A tablespoon of butter.
- Two tablespoons of vegetable oil.

How to cook baked pike perch
Well, the list is, of course, good. Now we need to get this whole thing and prepare it for further actions. All is ready? Then we can get started. First, turn on the oven and leave it to warm up at low speed. In the meantime, take our fish and rinse it thoroughly under running cold tap water. If the carcass is whole, then you will have to chop off its head, gut it and rinse it thoroughly again. Next, dry it with a towel or paper napkins and cut it into portions. Mix salt and pepper (preferably freshly ground) and rub each piece with this mixture. Next, we lay these pieces out in one layer at the bottom of a dish made of heat-resistant material.

Place a frying pan on the fire, add butter and add vegetable oil. When the contents stop foaming abundantly, add finely chopped onion and fry until it becomes soft. Cut the mushrooms into medium pieces and add them to the pan with the onions, add salt and pepper to taste. Fry everything for about five minutes, stirring constantly. After this, pour in the cream and stir thoroughly.

Pour the resulting sauce over the fish pieces. Distribute the mushrooms evenly over the entire surface of the dish. Well, all that remains is to stuff all this stuff into the oven, which by this time should heat up to one hundred and ninety degrees. Bake for about twenty minutes, plus or minus, depending on the nature of the particular oven. Then sprinkle the fish first with parsley and then with grated cheese. Well, we put it back into the heat for ten minutes so that the cheese is properly browned. Remove and serve IMMEDIATELY.

  • Parmesan cheese - 150 gr.
  • 3-4 tomatoes (it all depends on the size). Pike perch with tomatoes and cheese will be more tasty if you use soft tomatoes.
  • Shallots – 3 pcs. (if you can’t find it, you can take 2 pieces of regular onion)
  • Sour cream – 100 ml.
  • Cream (fat content – ​​15%)
  • Dill - a couple of branches.
  • Olive oil
  • Spices (tarragon, nutmeg, black pepper, Provençal herbs).

Cooking process

First you need to purchase (no matter where, the main thing is fresh). We choose a weight of no more than 1.5 kilograms. Then we clean it of scales, remove the head and caudal dorsal fins.

  1. Separate the fillet from the bones (pike perch baked with cheese and tomatoes will be in the form of fillets, with mushrooms - in the form of pieces).
  2. Remove the skin from the fillet and cut it into pieces of 3-5 centimeters. Salt, pepper, add tarragon and nutmeg. nut, add a tablespoon of oil.

  • Cream – 1 full glass 30%.
  • Shallots – 2 pcs. cut into half rings.
  • Parsley - half a bunch (finely chopped).
  • Parmesan – 100 gr. (you can buy already shabby, as in the previous recipe).
  • White pepper (ground).

Preparation

  1. Preheat the oven for the dish “pike perch with cheese in the oven” to 150 degrees, remove the scales from the fish, gut it, cut off the head, tail and fins.
  2. Cut into 4 cm pieces. Rub with salt and pepper. Place in the mold in one layer.
  3. Heat the olive oil in a frying pan, add the onion and sauté until soft, then add the peeled and chopped boletus (in my case). Salt, pepper, set aside for about 5-6 minutes.
  4. Pour cream over mushrooms and mix thoroughly. The resulting sauce is used to coat the fish pieces.
  5. Place the pan in the oven and bake for half an hour. After this, remove, sprinkle with parsley and grated Parmesan cheese on top.
