Using a vegetable peeler, peel the carrots. Next, thoroughly rinse the vegetable under running warm water to remove any remaining soil and place it on a cutting board. Grate the component on a coarse grater and then briefly pour it into an empty plate.

Step 4: prepare the onions.


Using a knife, peel the onion and then rinse thoroughly under running warm water. Place the component on a cutting board and finely chop into cubes. Pour the chopped onions into a clean plate.

Step 5: prepare the champignons.


Using a knife, remove the top skin from the champignon caps. Now rinse the mushrooms well under warm running water and place them on a cutting board. If necessary, remove rough spots, especially cut areas on the legs, and then chop the components into pieces. We transfer the chopped champignons to a clean plate and proceed to preparing the cheese.

Step 6: Prepare Parmesan cheese.


Using a fine grater, grate the Parmesan cheese directly onto the cutting board. Then pour the shavings into an empty plate.

Step 7: prepare a salad with mushrooms, chicken, eggs and cheese.


First of all, pour a small amount of vegetable oil into the frying pan and put it on medium heat. When it warms up well, pour in all the carrots and half the onion. Stirring occasionally with a wooden spatula, fry the vegetables until 5-7 minutes until soft. Then we don’t turn off the burner, but simply pour the contents of the pan back into the plate. Attention: We try to do this so that most of the oil remains in the container.

Now add the remaining onion here and continue frying. If necessary, add a little more vegetable oil. When the vegetable becomes soft, put the chopped champignons in the pan and continue to cook everything another 10-12 minutes. During this time, all the liquid should leave the mushrooms and the components should become golden brown. At the end, turn off the burner and continue preparing the salad.

Important: Since our dish will consist of layers, do not forget to coat each one well with mayonnaise, leveling it over the surface with a tablespoon. So, first of all, place the fried mushrooms and onions on the bottom of the salad bowl or on a special plate. By the way, we will need a little less sauce for this layer, since it is quite juicy on its own. Next, cover everything with fried carrots and onions. The third layer will be chopped boiled chicken fillet. Here it needs to be lubricated with a large amount of mayonnaise, since such meat usually turns out to be a bit dry.

Now pour finely chopped eggs into a container, and at the end - grated Parmesan cheese. Attention: so that all layers are well soaked and become juicy, be sure to wrap the salad bowl with cling film (this must be done so that the dish does not absorb foreign odors) and put it in the refrigerator for 2 hours.
